Gouldsburger’s started in Haddonfield only a few years ago, and now has 10 locations throughout the Delaware Valley. SJ food legends David Murray and Walter Gouldsbury, creators of Crumb (check out their incredible sandwiches!) wanted to do burgers and fries, so they opened Gouldsburger’s right around the corner to meet that need. Although “burger” is in their name, their take on the cheesesteak has been what put their name on the map.
And for their cheesesteaks, the roll is the main event! These restaurateurs partnered with another South Jersey culinary legend, Boaggio’s Bread, to source “everything bagel” seasoned rolls. The roll is soft and fresh and holds up well to the massive amount of filing. While I do like the effect of the everything seasoning, I actually would have wanted even more of that flavor.
The generous portion of steak is finely chopped and seasoned nicely, with no gristle and an excellent texture. Cooper Sharp was the default cheese, and was provided in abundance and mixed throughout. The cheese has a great flavor, although it overpowers both the beef and the everything seasoning flavors. The onions were finely diced and mixed in, but their flavor was also subdued by the cheese.
This is a great sandwich from an innovative food duo. As an added bonus, get the truffle fries as a side with your meal! They are some of the best I’ve ever tried.
