Corson’s is a small shop on one of Haddonfield’s side streets just off of King’s Highway. This was a fairly pricey cheesesteak, but as far as I could tell was one of the first “new” style steaks in South Jersey. There is a counter to order but you can’t see the prep area. I think they have a food truck…I wonder if the steaks are actually cooked on the truck behind the store? They also have roast pork, which we will try another trip.
Seeded rolls were an option, and this one was pretty good. The roll was fairly large and not too dark. The precut end of the roll was a little bit stale. The bread held together well while eating the sandwich, and the toasted sesame seeds had a great flavor. The roll was by far the star of the show.
Cheese options included provolone, American, Cooper Sharp, and Whiz – I chose the Cooper, which was very melty and sauce-like. The cheese was at the bottom and on top of the meat but not well incorporated throughout.
The grilled onions were huge, but unfortunately were just piled on top and not at all mixed in. They had an okay flavor but an off, overpowering smell.
The meat was almost slab-style with large thick strips, but with a bit more chop than the classic slab joints like Steve’s. The meat color was a little bit gray, with no texture or flavor of browning, but very generously stuffed. The thickness of the cut on the strips resulted in a chewy kind of bite.
